It would be great to allow the user to set the default response status for ideas and problems.

Agree, but it's something we'll consider adding in next big release. Though we don't have solid plans to make it possible during next few months

Is there any workaround? Just changing the database (added new status, changed is_default to 1 on this new status and changed is_default to 0 on the default status) doesn't work.

We have plans and already have layout to manage statuses on backend.
As of now, we'll check your procedures and let your know if any fix required.

In 2.2 release it's fixed -in 2.3 release it would be done in admin area
