When new ideas are taken up in a release, how do i capture the release number details
When an idea is scheduled to be taken up in a particular release, how can we show the same to the users. Also, how does one get to know the list of all ideas taken up in a particular release
You can use official answer to specify release number (right at the place, where you see this official answer to your question).
You can also use Merge Responses feature, available in Corporate edition to merge all ideas that were included in particular release into single idea, and then specify a summary for ideas included in that release.
Community members can view list of completed ideas by clicking "All" link at the bottom of "Ideas" block on community home page (/responses/ideas/status/completed).
Also, since UseResponse is open-source software - you can extend it's functionality by coding a new module, or extending existing ones to provide release notes functionality in the way you need it to.

I think the best way here will be Updates Module to gather all ideas, questions and problems in one update like release notes, but it's not in the package and we don't have it on our roadmap by 1.2.
But as Oleg mentioned, as of now the best way to notify members about completing ideas. resolving problems is changing status along with official answers or comments, and use provided filters in the list of responses
